Ingredients, for a medium-sized pan:
500 g crumbled feta cheese
500 g filo pastry (home-made or ready)
1 cup grated kefalotyri cheese
1 cup milk
5 eggs, whisked
finely-chopped parsley, pepper
Butter a rectangular pan and place most of the sheets on the bottom, also buttering each sheet. Prepare a mixture with the cheeses, milk, eggs and add the parsley and pepper. Pour the mixture into the pan and spread evenly. Place the remaining sheets over the mixture and butter these too. Butter the top sheet well and use a knife to form large squares on the filo surface. Bake for 45 to 55 minutes at a medium temperature.
